Issue #3609249: Restore the yoyaku_payments view after the Kessai payment refit

Restores the yoyaku_payments view that the Kessai payment refit removed along with the old yoyaku_payment entity and its views submodule.

The recreated yoyaku_payment_views submodule builds the view over kessai_payment (exposed by kessai_views), adds a Views relationship from the payment subject_id to its booking transaction, and filters to subject_type = yoyaku_transaction. Columns: ID, Order (transaction reference), Amount, Currency, State, Created, with an exposed State filter, at admin/booking/views/payments.

Also refreshes docs/payment.md for the refit gateway naming (manual/worldline now come from Kessai).

Sites that had the old submodule delete the orphaned config and enable the new modules (pre-1.0, no update hook):
