Issue #3609127 by mably: Refit the payment layer onto kessai and orchestra_payment

Remove the duplicated generic payment stack (entity, gateway plugin type, state machine, events, worldline/simulator/audit/views submodules) now provided by kessai. Keep the booking-specific policy, gateway resolution, settlement reactions and field injection, rewritten to call kessai directly with the transaction as the payment subject. Replace the orchestra glue with a BookingPayableResolver feeding orchestra_payment's payment interaction, and rebuild the deposit and no-show workflow actions on kessai.
