Back to DEV after varbase_starter 1.0.1.

Restores the branch to its development state, following this project's convention:

  • composer.json: version back to 1.0.x-dev, and every first-party cross-dependency back to its dev branch.
  • README.md: badge back to 1.0.x-dev.

The released 1.0.1 tag keeps the stable ~1.0.0 constraints, so this does not affect what a site installs from the release.
