Release Varbase Starter 1.0.0-alpha2.

Bumps composer.json version to 1.0.0-alpha2 and pins the used Varbase packages from their *.x-dev branches to stable release constraints (drupal/varbase_* → ~1.0, drupal/vartheme_bs5 → ~5.0), matching the 1.0.0-alpha1 release convention.
