fix: #3626818 Proximity field plugin options have no config schema

The proximity field stores units, source and source_configuration but its schema declared none of them, so any view using it failed strict schema validation. The origin source settings are now one shared type used by the proximity field, filter and sort; the sort's mapping had only covered source_proximity_filter. A kernel test saves a view using all three.
