Update atk_setup to properly copy cypress/playwright.atk.config.js to ./atk.config.js

@aangel after going over this a bit more I discovered that the files being copied weren't actually being renamed to atk.config.js. Therefore I thought it easier to just create a merge request. However, as I'm going through the setup I'm noticing more issues(primarily documentation). I'll keep trying to work through things and report them as I come across them.
