Ensure variables check jobs and similar do not expose real user emails or other PII (GDPR)

Problem/Motivation

We need to ensure that any variable checking/GitLab debugging steps we're using in the templates don't inadvertently expose PII. Git being tied to user email addresses means that it is relatively easy to accidentally expose user emails.
