Chat proxy to LLM ignores the model selected for the translate_text operation

## Summary
`ChatTranslationProvider::translateText()` discards the `$model_id` it is handed and always translates with the site's default **chat** model. The model selected for the Translation (`translate_text`) operation on the AI settings form therefore has no effect.
## Steps to reproduce
1. Configure a chat provider that offers at least two models (for example OpenAI).
2. At `/admin/config/ai/settings`, set the default **Chat** provider and model — say OpenAI / `gpt-4o-mini`.
3. On the same form, set the **Translation** operation provider to _Chat proxy to LLM_ and pick a **different** model from the list — say `gpt-4o`.
4. Enable request logging (AI Observability, or the provider's own dashboard).
5. Translate a node from the Translate tab.
## Expected result
The request is sent with `gpt-4o`, the model selected for the translation operation.
## Actual result
The request is sent with `gpt-4o-mini`, the default chat model. The selection made for the translation operation is silently ignored.
## Cause
In `src/Plugin/AiProvider/ChatTranslationProvider.php`:
- `translateText()` (line 169) receives `$model_id` but never reads it. The chat call on line 233 passes `$this->chatConfiguration['model_id']` instead.
- `$this->chatConfiguration` is populated in `loadTranslator()` (line 258) from `AiProviderPluginManager::getDefaultProviderForOperationType('chat')`.
The value chosen on the settings form is stored in `ai.settings: default_providers.translate_text.model_id` and then never read.
The model list itself is fine: `getConfiguredModels()` (line 134) returns the chat models of the default chat provider, which is the correct set to choose from. Only the chosen value is dropped.
## Suggested fix
Use `$model_id` when it is non-empty, falling back to the default chat model:
```php
$model = $model_id ?: $this->chatConfiguration['model_id'];
$message = $this->realTranslator->chat($messages, $model, ['ai_translate']);
```
Two knock-on points for whoever picks this up:
- `loadTranslator()` passes `$chatConfig['model_id']` to `hook_ai_translate_translation_alter()`. Implementations reading that argument would still see the chat default rather than the model actually used, so it should probably receive the resolved model as well.
- `TextTranslator::providerSignature()` (line 252) appends the default chat provider and model to the translation cache key precisely because the proxy ignores `model_id`. Its docblock documents today's behaviour and should be revisited alongside the fix. The key stays correct either way, since the `translate_text` model is already part of it.
## Related
- `language_settings.<langcode>.model`, the per-language **AI model** select on the AI Translate settings form, is likewise never used to pick a model. It is read only in `ContentTranslationControllerOverride.php` to name the model in the _Translate using …_ link. Arguably a separate issue, but the same class of surprise.
- #3585528 documents the current behaviour.
## Environment
- Drupal version: 11.4.6
- Module version: affects 1.3.x, 1.4.x and 2.0.x (the same line is present on all three)
- PHP version: 8.4
- Provider: any, via _Chat proxy to LLM_
